We have been planning a campout for Easter weekend for months. Amy made the reservation at Bastrop State Park where we could meet and celebrate together, and Alex & Nicholas could use the new camping equipment that they received as wedding gifts. Bastrop is a beautiful little Texas town about 100 miles from home, almost exactly halfway between Houston and San Antonio. Saturday afternoon we all arrived within a short time of each other, and set up camp -- Nick & Alex in a green tent, Ben & Amy and Isabelle in a red/white tent, and Lee & I in the red truck.
The skies were cloudy and it sprinkled off/on all afternoon, but we had a great time enjoying the outdoors. Isabelle was surprised on two different occasions to find Easter eggs hidden around the campsite! We roasted hot dogs for dinner, along with yummy tin-foil dinners that Alex had prepared. I thought that I was so clever because I had brought caramel/vanilla marshmallows to roast over the fire, but Alex's tin-foil apple empanadas were even better!
Since rain seemed likely, Lee and I opted out of sleeping under the stars in the back of the truck, and cuddled up in the back of Nick & Alex's Blazer instead. Lee was just getting the old Coleman stove fired up to start cooking breakfast this morning when it started to really rain! Fortunately, Isabelle had already found the Easter baskets and more hidden eggs. When the rain finally let up a bit, we hurriedly packed everything up and gave up on any further campout fun. We drove into the historic little town of Bastrop looking for breakfast and found a real treasure. We were a pretty scraggly bunch that wandered into Maxine's Cafe, and had one of the best breakfasts ever. In fact, Ben claimed it was the "best griddle cake" he had ever tasted, and as big as a dinner plate! So, Maxine put the finishing touch on our Easter campout, and although it was wet and muddy, it was an Easter weekend to remember!
P.S. Don't ever pass through Bastrop without stopping for a great meal at Maxine's Cafe!

Oh my, that breakfast at Maxine's was so yummy! It was a great Easter for Belle and she is already ready to campout again!
